 Blackberry Mousse
 Ingredients:
     2 tablespoons cold water  2 cups packed fresh blackberries
     1 envelope unflavored gelatin  1/3 cup plus 2 tablespoons granulated sugar
     1/4 cup water  2 egg whites
     1 1/2 cups whipping cream  Blackberries, for garnish, optional
Blackberry Mousse
 Preparation:
1. Puree the blackberries in a food processor or a blender.
Strain through a fine strainer to remove the seeds.
2. Soften the gelatin in 2 tablespoons of cold water. then set aside.
3. In a medium saucepan, place the blackberries,
the sugar and 1/4 cup of water. Simmer for 5 minutes.
Mix into the gelatin mixture.
4. Beat the egg whites until they are stiff but not dry.
Fold into the berry mixture.
5. Beat the cream until stiff peaks form. Fold into berries.
6. Pour the mousse into 4 to 6 individual serving glasses,
or a decorative bowl. Garnish with fresh blackberries, if desired.
7. Chill in the refrigerator for 3 hours or until ready to serve.
