Fideo Phutti (macaroni with cheese and eggs) | Ingredients: | |      | 2 cups macaroni |   | 3 eggs | |      | 1 onion |   | 100 grs. grated cheese | |      | 1 handful green onions |   | salt and pepper (to taste) | |      | 4 cups boiling water |   | oil (amount necessary) |

Preparation: |
Heat 1 tablespoon of oil in a pan and toast macaroni, stirring constantly until golden. Transfer to a pot with 4 cups of boiling water, add salt to taste, cover and simmer for 12 minutes, or until pasta is cooked. Do not overcook, and add more water if necessary. Chop finely the onion and green onion. Heat 2 tablespoons of oil in a pan and sautée for 2 minutes; add salt and pepper to taste. Add the eggs and cook stirring continuously just until they are cooked. Add to the macaroni along with cheese and check seasoning. Serve alone, with meat, or vegetables. |
