Apple Upside Down Cake | Ingredients: | |      | 1/4 kilo ricota cheese |   | 50 grs. ground walnuts | |      | 40 grs. honey |   | 4 Granny Smith apples (green apples) | |      | 3 tablespoons brown sugar |   | 2 tablespoons sugar | |      | 1 tablespoon whipped cream with sugar |   | 1 teaspoon vanilla | |      | 2 egg whites |   | 1 tablespoon orange rind |

Preparation: |
1. Cream the ricotta cheese with the honey, orange rind, ground nuts and vanilla. 2. Beat the egg whites to soft peaks. Add the sugar and keep beating until stiff consistency. Add them to the cheese preparation. 3. Line with aluminum foil an 18-20 cms. diameter tin. Peel, slice and mix the apples with the brown sugar. Arrange slices in the bottom of tin. 4. Pour the mixture on top. Bake in medium temperature oven for approximately 15-20 minutes. 5. Remove from oven. When cake is still warm, remove from tin and place it upside down in a dish. Garnish with whipped cream. |
