 Lapping
 Ingredients:
     1.000 grs. beef  2 pounds lima beans
     2 large onions  6 tomatoes
     400 grs. soft fresh cheese  8 medium potatoes
     1/2 papaya (medium size)  2 tablespoons prepared mustard
     salt  4 tablespoons soy sauce
     1/2 teaspoon ground black pepper  2 garlic cloves
     1 small bunch quilquiña  4 tablespoons oil
Lapping
 Preparation:
1. Cut the meat in 4 portions. Flatten each piece of meat with a meat pounder or a knife.
2. Press the papaya with a fork and put the fruit over the meat. Cover and let it stand for 2 hours.
3. Cook the lima beans in water without peeling them.
4. Cook the whole potatoes in water with the skin on.
5. Thinly slice the onions. Cut the tomatoes in thing strips, and add to the onions. Add the quilquiña leaves, and the crumbled cheese to salad.
How to prepare the meat:
6. Remove the papaya from meat.
7. Add the mustard, pepper, crushed garlic, soy sauce, and salt. Let it stand for 10 minutes.
8.Drain any liquid from meat in small bowl and set aside. Heat oil in a pan and fry the meat both sides. Once the meat is nicely browned, add the liquid and cover.
9. First serve the potatoes, lima beans, and the salad. Serve the meat on top. Pour any juice from meat that is left in the pan.
 Comments:
* You can also serve corn on the cob with this meal.
* You can fry the meat in more oil, but it might not have any juice.
