 Fritanga
 Ingredients:
     4 pounds pork ribs   5 red hot peppers
     4  large onions   3  garlic cloves
     salt  ½ teaspoon ground black pepper
     ½ teaspoon ground cumin   1 handful fresh green chives
     4 eggs   ½ cup oil
     1 cup water  8 large potatoes
     3 cups chuño (optional)  
Fritanga
 Preparation:
1.- Chop the onions and garlic. Place the oil in a pot and stir-fry both ingredients for a few minutes.
2.- Blend the red hot pepper with some water and add to the pot.
3.- Incorporate the pork ribs and stir fry for 2 o 3 more minutes. Pour one cup of water. Cover and cook at very low heat for about 2 hours, or until the meat is tender. Stir occasionally.
4.- Pour more boiling water in case the liquid evaporates too fast. The meat should be cooking with plenty of sauce.
5.- Check seasoning. Add the chives finely chopped.
6.- Add the eggs to the pot; stir and cook for 2 minutes. Turn off the heat.
7.- Cook the chuño and potatoes in separate pots.
8.- Serve the ribs and sauce, with potatoes and chuño.
 Comments:
Chuño: Since they are dried-frozen potatoes, first, you need to soak them overnight. Then, peel them and coarsely chop them. Put the chuño in a bowl and wash it several times squeezing the potatoes with hands.
