Moist Rhubarb Coffeecake | Ingredients: | |      | 2 cups Cake flour |   | 1 tsp Baking powder | |      | 1 tsp Baking soda |   | 1/2 tsp Salt | |      | 1 cup firmly packed Light brown sugar |   | 1 Egg | |      | 1 cup Plain yogurt |   | 1/2 cup Applesauce | |      | 3 cups coarsly chopped Rhubarb |   | 1 tsp Vanilla | |      | 1/3 cup Sugar |   | 1 Tbsp Melted butter | |      | 1 1/2 tsp Cinnamon |   | Optional Walnuts or pecans |

Preparation: |
In large bowl sift flour,baking soda,baking powder,and salt. In a seperate bowl mix the egg and sugar,then add the yogurt,appleasauce and vanilla. Stir into the flour mixture until blended. Add the chopped rhubarb and mix well. Turn it into a 9-inch square pan that is greased or sprayed. Melt the butter add the sugar and cinnamon together and sprinkle on top of mixture. Bake at 350* for 30 - 35 minutes or until the cake test done in the center. |
