Mario Batali's Spicy Linguine with Crab
Ingredients:
    
1 pound Linguine
 
1/2 tsp minced red habanero chiles
    
4 TBP Extra virgin olive oil
 
2 TBP chopped roasted cipollini onions
    
1 pound fresh lump crabmeat (pick out the cartilage)
 
salt and pepper to taste
    
3 tsp diced seeded jalapeno
 
1 TBP minced freash cilanto (heaping)
Preparation:
Boil pasta until done as per package directions.
While pasta is boiling prepare the sauce.
Cook in a large saucepan over medium heat.
Add the habanero, 2 TBP olive oil, and the onions and stir frequently.
Add 3 TBP of the pasta water, stir, and add the rest of the olive oil.
Add the pepper, stir, then immediately remove the pan from the heat.
Add the jalapeno and stir.
Drain pasta, reserving about a cup of the pasta water, and toss it with the crab sauce.
(If the mixture is dry, add a little more pasta water). Add the cilantro, toss again,
drizzle with olive oil and serve.
