 Carla and Clinton's Bacon-Wrapped Grilled Shrimp with Dijon Butter Sauce
 Ingredients:
     8 slices good quality bacon  1 poind Jumbo shrimp
     Salt to taste  freshly ground pepper to taste
     Olive oil to taste  1/4 cup Dry White Wine
     3 TBSP White Wine Vinegar  1 tsp Dijon Mustard
     1 tsp Shallot (finely minced)  1 stick unsalted butter (cold and cut into pats)

 Preparation:
For the shrimp: Preheat a grillpan to medium-high. Preheat oven to 350.
Cut bacon slices into halves and arrange on a sheet tray. Bake at 350 for 5 minutes, still pliable.
Lightly brush olive oil on the shrimp and season with salt and pepper.
Wrap the bacon around each shrimp and secure with a toothpick.
Grill shrimp for about 4 minutes per side, until bacon is crisp and shrimp are cooked through.
For the Dijon Beaurre-Blanc: Combine the wine, white wine, vinegar, dijon mustard, and shallot and bring to a boil,
lower the heat and then reduce by half (about 2 minutes).
Reduce the heat to low and then begin to add the butter and continuously whisk the liquid and adding the butter one pat at a time,
wait until it is melted to add the next one.
Remove shrimp from heat and serve with Dijon Butter Sauce.
