 Spinach Egg Casserole
 Ingredients:
     3 Cups Chopped Spinach  6  Eggs, beaten
     1  onion, diced  1 can mushrooms
     Half loaf french bread   1 pkg shredded cheese
     To Taste Salt and pepper  
 
 Preparation:
Saute onions and mushrooms in pan, add chopped spinach to pan and cook till wilted. Beat eggs in bowl with pepper and salt. Line casserole dish with bread slices, spread spinach/onion/mushroom mixture over top. Pour eggs over the top and cover with aluminum foil. Cook at 350 for 20 minutes. Uncover and add shredded cheese over the top. Cook until browning at edges and eggs are firm.
 Comments:
Add: could add chicken chunks (brown in pan with onion before putting in pan) for breakfast, serve with bacon and sliced tomatoes
