 Marinated sardines
 Ingredients:
     500 g small sardines  1 cup cider vinegar
     1 cup white wine  1/2 cup water
     2 tablespoons sugar  1 bay leaf
     1 sprig tarragon  2 small red onions
     salt to taste  ground black pepper to taste
 
 Preparation:
1- Remove the scale to the fish.
2- Remove the head, viscera and the spine, leaving them open.
3- Wash them well and put them in a ceramic or glass container.
4- Cover with cold water and soak for 1 hour.
5- Meanwhile, put over heat a saucepan with the vinegar, wine, water, sugar, bay
leaf, tarragon, salt, pepper and onions, peeled and cut into rings.
6- Cover, cook for 5 minutes and let cool.
7- Once the prepared is cold, drain the fish and place in the dish, well rolled in
on themselves, or to taste.
8- Cover with the marinade, cover and let in the refrigerator 24 hours before
serving.
