Pollo en pipián dulce (Chicken in sweet pipián sauce)
Ingredients:
    
1 1/2 kg chicken
 
1/2 cup milk
    
2 cups chicken broth
 
1 tablespoon sesame
    
4 red bell peppers
 
3 tomatoes
    
1 onion
 
2 cloves garlic
    
2 tablespoons oil
 
1/4 cup orange juice
    
1/2 cup pumpkin seeds
 
1/2 teaspoon coriander
    
salt to taste
 
ground pepper to taste
Preparation:
1. Wash the chicken inside and outside and dry with paper towel.
2. Place in a pot and cover with broth and cook until almost tender.
3. Wash, peel and cut the tomatoes into large chunks.
4. Cut the bell peppers into chunks.
5. Peel and chop the onion and garlic.
6. Make 2 puree in the blender, one with sesame, pumpkin seeds and milk; another
puree with bell peppers, tomatoes, onion and garlic. Mix both.
7. Heat oil in a skillet and saute the puree and stir for 5 minutes.
8. Drain the chicken, reserve the broth and place the chicken back in the pot.
9. Add the puree, pour with orange juice, 1 cup of broth, coriander, salt and
pepper.
10. Mix, cover and simmer about 15 minutes.
11. Serve with chopped almonds and raisins, cooked rice or to taste.
