 Hearty Lentil Soup
 Ingredients:
     2 cups  Dried Lentils  1 head Pressed Garlic
     2 med Red Onions  1-1/2 Tbs Olive Oil
     1/2 bunch Celery, diced  4-5  Carrots, sliced into 1/4" coins
     4 med  Potatoes, cubed with skin on  8-10 cups Vegetable stock or water
     2  Bay leaves  1 tsp Parsley
     1 tsp Thyme  1 tsp Oregano
     Salt and Pepper to taste  Other veggies to consider: Zuchinni
     Corn Peas  Mushrooms Green Beans
     Bell Pepper Tomato  
 
 Preparation:
Saute onions and garlic in olive oil over medium heat for about 5 minutes or until soft. Add water or stock to onion and garlic mixture. Add remaining ingredients and simmer, stirring occasionally for at least 1 hour until all vegetables are soft.
 Comments:
Why an entire head of garlic? Why not! I make this for my family every winter and everyone stays very healthy...coincidence? I think not! Serve with fresh baked rolls, cornbread, or rosemary foccacia bread.
