Hearty Lentil Soup | Ingredients: | |      | 2 cups Dried Lentils |   | 1 head Pressed Garlic | |      | 2 med Red Onions |   | 1-1/2 Tbs Olive Oil | |      | 1/2 bunch Celery, diced |   | 4-5 Carrots, sliced into 1/4" coins | |      | 4 med Potatoes, cubed with skin on |   | 8-10 cups Vegetable stock or water | |      | 2 Bay leaves |   | 1 tsp Parsley | |      | 1 tsp Thyme |   | 1 tsp Oregano | |      | Salt and Pepper to taste |   | Other veggies to consider: Zuchinni | |      | Corn Peas |   | Mushrooms Green Beans | |      | Bell Pepper Tomato |   |

Preparation: |
| Saute onions and garlic in olive oil over medium heat for about 5 minutes or until soft. Add water or stock to onion and garlic mixture. Add remaining ingredients and simmer, stirring occasionally for at least 1 hour until all vegetables are soft. |
